Prepare the ribs and clean them.

Pour cold water into the pot, add ginger slices, green onions and cooking wine and blanch for three minutes.

Rinse with cold water to remove any scum.

Heat oil in a pot over low heat, add rock sugar and boil until brown.

When the sugar turns slightly yellow.

Add pork ribs and stir-fry until fragrant.

Stir fry evenly.

Add star anise, cinnamon, bay leaves and rice pepper and stir-fry evenly.

Add beer and salt and stir-fry evenly.

Transfer to electric pressure cooker and simmer for 20 minutes.

After the time is up, add chicken essence and oyster sauce to taste, drain the soup, add garlic sprouts and stir-fry evenly.

Remove from the pot and serve on a plate.
