Pickled pepper chicken feet

Wash the chicken feet, remove the nails, and chop into small pieces, usually one claw is chopped into discs. Filter water and set aside.

Prepare the ingredients for pepper water

Take a cooking pot and add one-third of the water (about 1.2L, the amount of water here is up to you, if it’s too much, you don’t need to use so much later.) After boiling, turn off the heat. Add star anise, cinnamon, bay leaves, and peppercorns to soak. Note here that it is soaking, not boiling! Set the pepper water aside to cool and set aside.

Take another larger cooking pot, add half a pot of water, add ginger slices, salt, Huadiao, and bring to a boil.

Add the chicken feet and cook over high heat for about 10 minutes (the skin of the chicken feet should be just a little poppy. Do not cook it too soft, otherwise it will not be crispy enough after soaking)

Take it out and rinse it with cold water until the chicken feet are completely cooled

Filter water and set aside.

Pour the cooked chicken feet, radish, asparagus, minced garlic, and chili padi into a large plate, then add pepper water, pepper pickling water (pour the whole package into it), and add an appropriate amount of vinegar. Stir, experiment, adjust to taste. Keep it in the refrigerator to make it taste even better!
