Pumpkin Peanut Cup Bread
Overview
A cup bread that requires no kneading or molding. Although it is a simple version, the baked bread still tastes very fragrant and soft; it also combines the sweetness of pumpkin and the richness of peanuts~~~

Prepare the required ingredients.

Prepare pumpkin puree. (Only take an appropriate amount of pumpkin puree)

Prepare peanut kernels.

Cook the peanuts in the microwave. Put on medium heat for 1 minute, take it out and mix it, then put it on medium heat for another 30 seconds, take it off and mix it, and finally put it on medium heat for another 30 seconds.

After cooling, remove the red coating from the peanut kernels and crush them with a food processor for later use. (I broke it a bit, so it’s best to use a rolling pin to press it)

Break the eggs into a bowl, add sugar and beat until white.

Add appropriate amount of pumpkin puree and mix well. (Don’t add too much pumpkin puree first. You can add an appropriate amount in the end according to the dry consistency of the dough)

Add the yeast and mix well, then let it sit for about 10 minutes.

Mix high flour, low flour and milk powder and add them.

Stir in elbow direction to form a uniform dough. (The mixed dough should be relatively dry)

Then add corn oil.

Then stir evenly in the clockwise direction until the dough becomes stringy. (Because the dough is dry, it is not as easy to mix as batter bread, so you have to let someone with strength at home do it.)

Leave the dough in a warm place to ferment 2 to 2.5 times in size.

Add chopped peanuts.

Mix the dough again until smooth.

Put it into a mold lined with oiled paper tray about 7 minutes full.

Continue to put it in the oven for a second rise (about 1 hour), take it out and brush it with honey and egg wash. (It is a 1:1 mixture of honey and whole egg liquid)

Preheat the oven in advance: 175 degrees for 14 minutes. After 10 minutes, turn off the heat and continue baking until the surface of the bread is golden brown. The time and temperature are for reference only, please adjust according to the firepower of your own oven.
