Cut 10 grams of white scallions into sections, 5 grams of ginger into shreds, and three sections of garlic into slices.

Mix salt, sugar, soy sauce, vinegar, chicken essence and starch with 5 spoons of water.

Cut the tofu into small pieces of about two centimeters, soak in salted water for fifteen minutes, remove and drain.

When the oil in the pot is 60% hot, add tofu and fry until brown, remove and set aside.

Add oil and Sichuan peppercorns. When the oil is hot, take out the Sichuan peppercorns and when they turn dark, add ginger and garlic and sauté until fragrant. Add chili bean paste and stir-fry the red oil. Add scallions and add a spoonful of water. Add green beans and cook for three minutes. Add red peppercorns and stir-fry.

Add the fried tofu and stir-fry, then pour in the prepared sauce, continue to stir-fry until the sauce thickens, and turn off the heat.
