Overview

We all prefer food that is approachable, because it has a good taste that can be felt without having to experience it deeply. Today's meatloaf is a Japanese home-cooked dish that is easy to serve on the table. Compared with making authentic fish sushi by yourself, this meatloaf is more reliable at home. Deep frying is a traditional way of cooking Japanese meatloaf, and it is also the cooking method with the best taste. However, there are a few small problems that you have to be aware of. First, it requires a lot of oil, which is a bit wasteful and troublesome for Chinese families who do not often make fried food. Furthermore, even though enough oil is used, the heat of deep frying the cheese sandwich meatloaf is really difficult to control. The meat must not be old, and the cheese core must be heated through and liquefied without overflowing. For these two problems, I used a trick from Western chefs, frying first and then grilling, so that the outer shell of the meatloaf is crispy, while the temperature and time are accurately controllable, and it is no longer difficult for the inside to be cooked.

  1. Step1. Mix the ingredients to make meat patties (use a whole egg), stir clockwise to fully absorb the water into the minced meat (so that the minced meat will be elastic and not dry after roasting), then divide the cheese into two pieces and wrap them in the minced meat respectively, wrap the meat patties and refrigerate for 30 minutes. There are cheese-wrapped meat patties in the Xian Guan supermarket. If the taste suits you, you can also buy them directly.

  2. Coat the meatloaf with a thin layer of flour, tap lightly to remove excess flour, then roll in egg whites, and finally bread crumbs. Preheat the pan and wait until the oil streaks change from thick to thin. Preheat the oven to 175 degrees.

  3. Fry the patties in the pan over medium heat.

  4. Until both sides are golden brown, then use tongs to hold the patties up and fry on all sides until golden brown.

  5. Move the fried meatloaf into the oven (use a grill and put a tray down to catch the dripping fat), and heat the middle layer up and down at 180 degrees for 20 minutes.

  6. It is ready when the internal temperature of the meatloaf reaches 70 degrees.

  7. Remove the meatloaf and the grill from the oven, let it rest at room temperature for 10 minutes, and serve with salad and lemon wedges.
