Tofu curd
Overview
Tofu brain is my favorite breakfast. A bowl of tofu brain with a big fried dough stick is so delicious! I have not been very good at making tofu pudding myself several times. Today I deliberately recorded every step with an electronic scale. The final result was quite satisfactory, so I recorded it. On the one hand, I will save myself from forgetting it in the future. On the other hand, it will also serve as a reference for friends who want to make their own tofu pudding but don’t know the ratio.

Soak the dried soybeans in cold water the night before.

Take another 250 grams of soaked soybeans, 1400 ml of water and 4.2 grams of lactone for later use.

Take a colander and place it on the basin. Place a piece of wet cotton cloth on the colander to filter out the bean dregs.

Pour 250 grams of soaked soybeans into the cup of the wall breaker

Add 1400ml of water

Install the cooking cup on the base as indicated by the arrow

Secure the two-piece lid

Plug in the power, select the grain button and then press the switch. The machine starts, and the beans are smashed to pieces in an instant. In order to make the bean dregs more delicate and produce more soy milk, I used the grain program twice.

Slowly pour the beaten soy milk onto the cotton cloth

Finally, pocket the cotton cloth and pinch the upper part to squeeze out the dried bean dregs.

Heat the soy milk with the bean dregs removed on a gas stove, bring to a boil and then simmer over low heat for 12 minutes. (Soy milk is very easy to overflow, so be sure to watch carefully, otherwise it will be difficult to wipe!)

Weigh 4.2 grams of lactone and place it in a basin, then use 10 grams of boiling water to dissolve the lactone.

After the soy milk is cooked, pour it into a basin containing the dissolved lactone.

After pouring, be sure not to stir, cover the lid and let it sit for 20 minutes

While it rests, we cook the remaining soybeans. (Please note that this is used as a garnish for the tofu puffs at the end. It does not use cooked soybeans to make the tofu puffs. Remember.)

While it is resting, we prepare chopped coriander, minced mustard, hot sauce, chive flowers and light soy sauce.

When the time is up, open the lid and a pot of tender tofu curd is ready. Use a spoon to gently scoop it into a bowl.

Place the chopped coriander, mustard mustard and cooked soybeans on the tofu brain.

Add another half spoonful of chive flower sauce

Add a spoonful of light soy sauce

Finally, pour a spoonful of hot sauce and enjoy!
