Leftover Spicy Hotpot
Overview
I am going out for two days tomorrow, and there are some vegetables left at home. If they are not eaten, they will be thrown away, so I just made a pot of spicy hotpot. I think the spicy hotpot dish is wonderful. There are no fixed requirements for the ingredients. You can use whatever you have at home. Haha, it feels like the southern stir-fried version~

Wash and slice the cured pork and prepare

All other ingredients are cut into pieces and ready

Heat linseed oil over medium heat until the potatoes are cooked, add potatoes and fry over low heat until the surface of the potatoes turns golden brown

The eggplant should also be lightly fried first. After the potatoes and eggplant are fried, remove them and set aside

Leave oil in the pot, add dried Sichuan peppercorns, dried chili peppers and dried orange peels and stir-fry until fragrant

Add garlic and ginger and stir-fry until fragrant, then add appropriate amount of bean paste and stir-fry over medium-low heat

Add the sliced bacon and stir-fry over low heat until the bacon is oily and becomes transparent. Dish out and set aside

Leave the base oil, add vegetables that are not easy to cook (carrots and cowpeas) and stir-fry, add a little water

Add the fried bacon slices, then stir-fry

Add the previously fried potatoes and eggplant, cover the pot, and simmer over low heat for 3-5 minutes

Add easy-to-cook vegetables (green and red peppers, green onions) and stir-fry

Add braised duck wings and stir-fry with a little light soy sauce and sugar

Place cucumber strips in a basin, add the fried ingredients, and drizzle with a few drops of sesame oil
