Two pieces of old tofu.

Cut into small cubes about three centimeters square, soak in light salt water for half an hour, remove and drain.

Heat the oil in the pot, add the old tofu and fry it.

Fry until the surface is golden brown and some parts begin to foam. When it turns into fried tofu, remove it to control the oil.

Slice the pork belly, cut the green pepper into rings, pat the green garlic first and then push it forward diagonally to cut.

Cut dry red pepper into small pieces.

Slowly fry the dried red peppers over low heat until they become fragrant, then add the meat slices and stir-fry the oil until they are dry.

Add the fried old tofu and continue frying.

Add the tofu and stir-fry for half a minute. Add appropriate amounts of dark soy sauce, light soy sauce, steamed fish soy sauce and salt to add color and flavor.

Add water until it is even with the tofu, then pour in the fried chili peppers, cover and simmer.

When the water is half dry, add a little oyster sauce to freshen it up, add green pepper rings and sour white parts, and stir-fry.

After frying for a while, add the garlic leaves and stir-fry evenly, then add water starch to thicken the gravy.
