Thai Coconut Curry Rice Noodles

Chop up two colors of carrots and set aside, this is my favorite vegetable. Especially the purple carrots imported from the Netherlands are sweeter than ordinary carrots.

Cut broccoli and mushrooms and set aside.

Soak the rice noodles in hot water for about 5-10 minutes.

If you don't have lemongrass, you can use lemon juice for extra flavor.

Add some olive oil to the pot, peel and fry the prawns until cooked, add appropriate amount of salt, black pepper and vanilla extract. Then add Thai red curry paste and mix well. (If you like it richer, add more. The amount is based on the product you bought.) After about a minute, add coconut milk and mix well.

Then add water, rice noodles, broccoli and mushrooms and cook over medium heat for about 5 minutes. Finally add honey, juice of 1 lemon and fish sauce to taste and mix well.

Sprinkle some black sesame seeds for decoration, and the fragrant Thai coconut curry rice noodles are ready. Enjoy it slowly.
