Wash the chicken wings and soak them in cold water. Bring the cold water to a boil and cook for about 2 minutes.

After blanching, wash off the scum with warm water and drain.

Prepare seasoning.

Pour cooking oil into the pot, add rock sugar, and stir-fry over low heat until the rock sugar melts.

Add chicken wings, add light soy sauce and dark soy sauce and stir-fry until browned.

Add onion, ginger, garlic, chili pepper, Sichuan peppercorns, star anise, tangerine peel and bay leaves, and stir-fry a few more times.

Pour beer and water to cover the chicken wings, add oyster sauce and salt, and bring to a boil over high heat.

Turn to medium to low heat and simmer for about 35 minutes until the juice is reduced.
