Healthy Stir-fried Bitter Melon, Peach Kernel and Fungus

I didn’t really like bitter melon in the past, but I started to eat bitter melon after reading health books about the various health benefits of bitter melon, and gradually fell in love with it

Cut off both ends of the bitter melon, take a small piece and scoop out the inner flesh with a small spoon

Then use a knife to scrape off the white film

Bring a pot of water to a boil, add a little oil and salt, add bitter melon and blanch it, then cool it in cold water, drain and control the water and set aside

Put the dried bitter melon into a container, add salt, chicken powder, pepper oil, sesame oil and sugar and mix well

Change the water and wash the fungus that has been soaked overnight

Peel walnut kernels and set aside

Cut off both ends of the carrot, take a small section and cut off both sides

Use a knife to trim off the excess, as shown in the picture

Bring a pot of water to a boil, add the fungus and cook for one minute, remove and control the water and set aside

Heat the pan, add the oil, add the peach kernels and stir-fry over low heat until fragrant and crispy, add the carrots and stir-fry briefly, set aside

Add the remaining oil and stir-fry the green onions and ginger until fragrant. Remove the green onions and ginger. Do not leave any oil aside

Add the fungus and stir-fry, add salt and chicken powder to taste

Add a thin layer of watery starch, add peach kernels, carrots, turn a spoon and serve
