Remove the scales and guts of the yellow croaker, wash and drain.

Cut the green onion into diagonal sections, slice the ginger and garlic, and cut the dried chili into small pieces.

Pour an appropriate amount of oil into a hot pan. When the oil is hot, add the croaker and fry over medium heat until both sides turn yellow.

Put the fish aside, add onion, ginger, garlic and dried chili and stir-fry until fragrant.

Pour in the cooking wine and cook over high heat until the cooking wine boils and evaporates.

Pour in another spoonful of vinegar (half of the ingredients) and heat until the vinegar boils.

Pour water up to the belly of the croaker, add light soy sauce and sugar, bring to a boil over high heat, then turn to medium-low heat and simmer for about 5 or 6 minutes.

When half of the soup is left, add salt and continue to cook for about 2 minutes.

Turn to high heat and reduce the sauce until the soup bubbles and thickens. Pour the remaining vinegar along the edge of the pot.

After boiling again, you can take it out of the pot and put it on a plate.
