Clean the eggplant, remove the tail, cut it into long strips of about 7 cm, add a spoonful of salt and spread it evenly with your hands, marinate for about 10 minutes, pour away the water from the eggplant, add an appropriate amount of starch, spread it evenly with your hands, and coat each eggplant with starch for later use.

Peel and mince the garlic, clean the peppers and cut them into small pieces. Add 1 tablespoon of cooking wine and a little pepper to the meat filling and stir evenly to remove the fishy smell. Add sugar, vinegar, light soy sauce and salt to the corn starch and stir evenly.

Put oil in the pot, a little more oil. When the oil is hot, put the eggplant strips into the pot and fry the eggplant. If you want it to be more delicious, you can add more oil, but the oil will be larger. Take out the fried eggplant strips.

In another pan, heat the oil and fry the pork filling first. After the pork filling changes color, add 1 tablespoon of bean paste and red pepper and stir-fry evenly.
