Stir-fried yam with fungus
Overview
Stir-fried yam with fungus is rich in nutrients, crisp, tender and refreshing. Black fungus is also known as the king of vegetables and has the highest iron content among meat and vegetarian foods. Eating more fungus nourishes blood and improves the appearance of the skin, making the skin rosy and preventing iron deficiency anemia.

Wash, peel and cut the yam into thin slices and soak in water.

Wash the fungus and blanch it in water for two minutes.

Boil water in a pot. After the water boils, add a little salt and blanch the yam for one minute and take it out.

Blanch fungus and yam, drain in cold water and set aside.

Cut green and red peppers into diamond-shaped slices.
