Wash all materials and set aside

Cut the duck into pieces and set aside. Put the duck pieces and ginger slices into a pot under cold water and bring to a boil. Do not cover the pot

Remove the blanched duck pieces, wash them, and marinate them with salt, cooking wine, soy sauce, dark soy sauce, sugar, ginger and garlic for 3-4 hours

Remove the duck pieces to control the water, remove the impurities from the marinade juice and set aside. Heat the oil in the pot, pour in the duck pieces and stir-fry for a minute.

Add the marinade (except beer and green onions) and stir-fry until fragrant

Then pour in the juice from the marinated duck cubes and stir-fry for a while

Finally, pour in the beer, add the onion knots, bring to a boil over high heat, then simmer over low heat for an hour, taste the saltiness and season according to taste
