Steps
-
Peel and devein the shrimps, wash and drain, add ginger, salt, cooking wine, white pepper and starch, mix well and marinate for half an hour to add flavor and set aside.
-
Wash the pork (I use tenderloin here, if you like fat and lean meat, you can use the front part of the pig), wash and drain the water, mince the meat, add an appropriate amount of cooking wine, salt, soy sauce, stir evenly and marinate for half an hour to add flavor and set aside.
-
Peel the carrots, grate and mince them, squeeze out the water and set aside. At the same time, wash the green onions, drain the water, chop and set aside.
-
Add chopped carrots, chopped green onions, eggs, a little salt and cooking oil to the marinated minced meat and stir evenly in one direction.
-
All ingredients are ready
-
Take a dumpling wrapper, put a small spoonful of marinated meat filling in the middle, put a marinated shrimp on top, fold it in half and pinch it.
-
Partially wrapped pot stickers
-
Pour a little oil into a hot pot over low heat, put the wrapped pot stickers into the pot, fry slightly until they are set, then pour a little water, cover the pot and simmer until the water dries up and the skin changes color, then it is ready to serve.
-
Dipping sauce: a little rice vinegar, a little minced garlic, and a spoonful of shrimp oil (if you don’t have shrimp oil, you can use sesame oil instead)
-
The shrimp pot stickers dipped in shrimp oil and vinegar taste extraordinary.
