Overview
This stir-fried pork with lotus vegetables is a banquet dish for guests in the Guanzhong and Weibei regions of Shaanxi. The meat is made from Guanzhong black pork with the delicate and mellow meat of Guanzhong Sanbao. The lotus is made from the crisp, sweet and refreshing nine-eyed lotus produced in Fuping, Shaanxi. The finished dish is yellow-red in color, crispy and tender, and very delicious.

Slice the lotus root and soak it in water. In order to prevent oxidation and discoloration, add 1 tablespoon of vinegar to the water. Slice the meat, add dark soy sauce, cooking wine, and pepper, mix well and marinate for 15 minutes. Soak fungus in warm water and wash. Chop onion, ginger and garlic.
