Put the pork belly into the pot with cold water, add green onion slices, ginger slices, star anise, peppercorns and rice wine, bring to a boil, then reduce to low heat and simmer for 40 minutes.

Remove the slices.

Slice the ginger, cut the dry red pepper into sections, remove the stems and seeds from the green pepper and slice it, and cut the green garlic into sections.

Add vegetable oil to the pot, add the meat slices and stir-fry to release the oil, then set aside.

Add the chopped Pixian bean paste and sweet noodle sauce and stir-fry until red oil is produced, then stir-fry with the meat slices evenly.

Add sugar, chicken juice, green pepper and green garlic stems, stir-fry until raw, then add green garlic leaves, stir-fry evenly.
