The temperature has dropped slightly recently, so it’s time to bake the mooncakes! Big salted egg yolk, sweet bean paste, made by yourself, it is delicious, not greasy, not greasy, clean and hygienic! One of the foodies in my family doesn’t like sweets, but the mooncakes contain Jinqixiang salted egg yolks. The whole taste is sweet and salty when wrapped in bean paste filling. After taking a bite, I couldn’t stop. I said it tasted better than the ones bought outside and the egg yolks were solid. I even asked to take a few pieces to my work to share with my colleagues, haha.

First soak the egg yolks in oil for 2-3 days to allow the oil to return to the egg yolks.

Bake in the oven at 170 degrees for 8-10 minutes, then take out and let cool.

Stir together the invert syrup, alkaline water, oil and salt.

Then pour in the flour and milk powder and stir.

Knead into a ball, seal and let stand for 1 hour.

Take advantage of this gap to process the filling: wrap the egg yolk into the bean paste filling.

Shape into balls, about 45g each.

Take out the rested dough and divide it into pieces of about 30g.

Let’s start making mooncakes officially! Shape the crust into a thick center and thin around the edges.

Wrap in the bean paste and egg yolk filling, push it up slowly with the tiger's mouth, and roll it into a round shape.

Cover with a little flour.

Sprinkle the mold with flour, turn it once, and pour out any excess flour.

Put the mooncake ball into the mold and flatten it slightly with the palm of your hand.

Press out the pattern and slowly lift the mold.

It looks pretty good.

Bake in the preheated oven at 200 degrees for about 5 minutes.

Beat the egg yolk liquid.

Take out the mooncakes from the oven and brush a thin layer of egg yolk liquid on the surface, leaving the sides unbrushed.

Then bake for another 15 minutes or so.
