Add minced onion and ginger, light soy sauce, cooking wine, oyster sauce, chicken powder, five-spice powder, pepper, sesame oil, and peanut oil into the minced meat filling, then stir in one direction to stir.

Cut the eggplant into eggplant clips

Fill the eggplant clips with an appropriate amount of meat filling and flatten them.

Mix flour and starch in a 5:5 ratio and add beer to make a crispy fried batter. Don’t make the batter too thin.

Dip a thin layer of starch on the outside of each eggplant box and put it into the prepared paste. Dip a layer of starch on the outside and the paste will be full.

Pour an appropriate amount of oil into the pot. When the oil is 60% hot, add the eggplant box, turn to medium-low heat and fry slowly until both sides are golden brown. Remove and drain the oil.
