Overview
Big shrimps, fresh and nutritious. Today I made this assorted shrimp dish using green shrimps. My family said that the shrimps were smooth and tender and had no fishy smell, so they were well done.

Ingredients: green shrimp, green pepper, black fungus, carrot, cucumber, ginger, green onion, red pepper.

Add a little salt and white pepper to the green shrimps, mix well with your hands, and marinate for 15 minutes.

Cut carrots, cucumbers, and green peppers into small pieces, cut green onions into small dices, cut ginger into small dices, and cut red pepper into small dices.

Boil water in a pot, blanch the soaked black fungus, take it out and set aside.

Blanch the carrots in boiling water and set aside.

Change the water in the pot again. When the water is close to 80 degrees, add the green shrimps, cook them slowly, remove them and set aside.

Add a little oil to the pot, add diced green onions and ginger, and stir-fry until fragrant.

Add carrot cubes and stir-fry.

Add black fungus and stir-fry.

Add cucumber pieces and continue to stir-fry.

Add oyster sauce, salt, and sugar and stir-fry evenly.
