Overview

Prepare the ingredients, soak the gelatine sheets in cold water and set aside

After pouring the egg yolks, continue beating with a whisk for about 5-10 minutes. Set aside the beaten egg yolk mixture.

Drain the water from the soaked gelatine tablets and heat it over water until it completely dissolves into a gelatine solution

Pour the gelatine solution into the cheese paste that was mixed before and mix evenly

Whip the animal-based whipping cream until soft peaks (textures just appear)

Add the whipped cream to the cheese batter and stir evenly.

Place a piece of cake on the bottom of the mousse film and coat with coffee wine. (Because I cut the edges of both slices of cake by mistake, you can just cut the middle slice when making it, or not cut it.)

Pour in half of the cheese paste and refrigerate for 20 minutes.

Continue to spread a layer of cake dipped in coffee wine on top of the cheese paste, and pour in the remaining half of the cheese paste

Place the cake mold in the refrigerator for about 4 hours

After the cheese paste is completely solidified, wrap a hot towel around the outside of the cake mold and you can easily remove it from the mold in about 20 seconds, or use a hair dryer to blow slightly on the outer wall of the cake mold.
