Fried Chicken with Chili

Chop the chicken into small pieces for easy ripening and flavor.

Soak the chopped chicken pieces in water for 20 minutes to soak out the blood.

Prepare 2 star anise, a small handful of peppercorns, onions, ginger and garlic. Set aside.

Cut the mushrooms into small pieces and cut the green and red peppers into horse ear shapes.

Remove the soaked chicken pieces and set aside for later use. Heat oil in a pan, pour in the water-controlled chicken pieces, and stir-fry over high heat until the water is dry.

Fry the surface of the chicken pieces until slightly brown, then add the ingredients and stir-fry until the aroma is released.

Add a can of beer, a spoonful of light soy sauce, a spoonful of dark soy sauce, 2 spoons of oyster sauce, a little sugar, turn to low heat and simmer for 10 minutes.

Add the shiitake mushroom pieces first and continue to simmer for 5 minutes.

Finally, add the green and red peppers and stir-fry over high heat for about 1 minute.

Add a spoonful of sesame oil and a spoonful of rattan pepper oil before serving.

Remove from the pan, serve on a plate, sprinkle with white sesame seeds and serve.
