Homemade water gluten stuffed pork
Overview
It was my first time to learn how to make water gluten. I bought stone-ground flour online and tried 500 grams of flour. In the end, I ended up with about ten finished products!

Add a spoonful of salt and an appropriate amount of water to the flour and mix it into a dough. The dough will be softer! Let it rise for about half an hour

Place the dough in a colander and soak in water

Knead it with your hands and it will feel like the dough is falling apart. It doesn’t matter.

During this period, the water needs to be changed several times until the water becomes clearer and clearer as it is washed

This is washed gluten, soaked in water for half an hour

Prepared meat filling

Add cooking wine, salt, ginger juice, abalone juice, white pepper, and Maggi umami juice and stir evenly

Add the onion and ginger water in portions, stirring each time until completely absorbed

Finally add sesame oil and chopped green onion and mix well

Take an appropriate amount of water gluten, I think it’s about 20 grams

Add appropriate amount of pork filling

Wrap it up slowly

Boil a pot of stock, add the wrapped water gluten and cook until it floats
