Custard buns
Overview
The filling of this custard bun is filled with butter, milk powder, and eggs. It is rich in nutrients, sweet but not greasy. The outer skin is fermented with yeast and is soft and delicious. It has a pure wheat aroma and is easy to digest and absorb. Very popular with children!

After the butter has softened, add the caster sugar and mix well

Add the eggs in 3 batches and mix thoroughly to combine

Sift in the starch powder, milk powder and custard powder

Stir smoothly without any particles

Put it in a steamer and steam over high heat for about 30 minutes

Use chopsticks to stir the custard filling from time to time during the steaming process so that it is completely steamed

After the steamed custard filling has cooled, cover it with plastic wrap and place it in the refrigerator for about an hour

Put the flour into a large basin and add the yeast. Add 20 grams of white sugar to the bowl

Dissolve the sugar with hot water and cool it until it is no longer hot

Cool to the point where it is not hot to the touch. Pour the sugar water about 40 degrees into the flour. Stir while pouring until it becomes like cotton wool

Take away the chopsticks and knead the dough with your hands into a smooth dough

Cover with a damp cloth and let rise in a warm place until doubled in size

Take out the dough, knead it to deflate, and knead it back to its original size. Roll into long strips and use your hands to pick out similar-sized pieces

Fill a steamer with half a pot of water and boil it to about 40 degrees. Place the wrapped custard buns into a steamer covered with steamer cloth or oil paper, cover with the lid and place on the steamer to rise for a second time for 10-15 minutes.
