Put the elbows into a pot of cold water, bring to a boil and blanch them, then add cooking wine.

Put the base oil in the pot, add rock sugar, and stir-fry until melted.

Add bean paste and stir-fry.

Add onions, ginger, garlic, Sichuan peppercorns, star anise, bay leaves, and dried chilies and stir-fry until fragrant.

Add light soy sauce, dark soy sauce, and white wine and stir-fry evenly.

After blanching the elbows, take them out and put them in a pressure cooker. Pour over the freshly fried sauce, add half a pot of boiling water, and pressure for 30 minutes.

After pressing, turn over and press for another 5 minutes.

Mixed dipping sauce: minced garlic, fresh soy sauce, vinegar, sesame oil.
