Prepare a large piece of fresh beef head and cut it into small pieces without breaking it too much.

Cut the ginger into slices and put it into the cooking pot, then add the peppercorns, aniseed, cinnamon and bay leaves and set aside.

Prepare a large bowl, put the chicken stock jelly and rock sugar, then pour in the boiling water, stir constantly until it melts, and finally pour it into the cooking pot.

Pour the dark soy sauce, seafood soy sauce, oil, cooking wine, white wine and refined salt into the large bowl you just set aside, then add the chopped green onion and refined salt and stir to make the sauce.

Put the beef into the large bowl where the sauce has been mixed. Use your hands to grasp the beef a few times to soak the beef in the sauce. Then cover with plastic wrap and marinate for 30 minutes.

In a separate wok, add water and eggs and cook for about 10 minutes. After the eggs are cooked, remove the shells and put them in the cooking pot.

Pour all the marinated beef and sauce into the pot, add water and stir, then bring to a boil over high heat, then reduce to low heat for 2 minutes, cover the pot and cook for 90 minutes. Be careful not to have too little water.

When the time is up, turn off the heat and let the beef and eggs soak in the pot for 30 minutes to infuse them with flavor.

Finally, pour it into a clean large bowl and it is ready to eat. Don’t pour the soup after eating, you can save it for marinating eggs in the future.
