I especially love eating vermicelli. Today I made minced vermicelli stew with potato flour and added eggplant. It goes very well with rice. The soup is not wasted. The bibimbap is very fragrant~

Assemble the ingredients and soak the vermicelli in cold water until soft.

Cut the eggplant into thick slices first, then cut into strips.

Add minced garlic and green and red pepper and stir-fry until fragrant.

Add Pixian bean paste and stir-fry until the red oil comes out. Add first-grade fresh soy sauce and stir-fry until the aroma of the soy sauce comes out. Add in oyster sauce and stir-fry.

After boiling, add eggplant strips, add a little salt, chicken essence and simmer for five minutes.
