【Mao Xiang Pancake】The classic street pancake can be made at home

In my first late autumn in Beijing, I lived in Xiyuan. I have never been back there since I moved there. Deep in my memory, I only remember that there was always a long queue at the stall selling sauce-flavored pancakes at the subway entrance. Great food and people willing to take the time to wait. Maotai-flavor pancakes, also known as Tujia Maotai-fragrant pancakes, are sold in most stalls that sell noodles nowadays. As for the taste, it is difficult to have the memorable aroma of the past~~~The crust is tasteless, the sauce is single, and it is already cold when you get it. Still in those days, waiting for the hot sauce-flavored pancakes in the cold wind was the most worth looking forward to. It was poverty, sweetness, and a simple and direct warmth! The most authentic sauce-flavored pancakes seem to have fillings, or meat fillings. This is at best a replica of the one on the street, and it is also a simplified version. As long as you buy the right ingredients for the sauce, it will basically taste as good as the one on the street. Before I took this photo, I made this cake twice and it was perfect both times! The day before yesterday, my mother called me and asked me what delicious food I had made recently~~~I made this cake for her when I got home, it was really delicious haha~~~~

Place flour, five-spice powder, and Sichuan peppercorns in a large bowl

Add hot water and stir while adding (flour has different water absorption, adjust the amount of water appropriately)

Kneading dough, dough state: soft, high humidity, but not sticky

Prepare raw materials B sauce, green onions, sesame seeds, dry spices (bay leaves and Sichuan peppercorns)

Heat a pan over low heat, brush with appropriate amount of oil; take 1/4 of the dough, roll it into thin sheets, put it in the pan, cover it, and make pancakes

At the same time, take a small pot, pour a little oil and stir-fry the bay leaves and Sichuan peppercorns over low heat. When the aroma comes out, remove the dried spices; add white sesame seeds and various sauces, continue to stir-fry over low heat until the aroma is released, turn off the heat and set aside

Cook both sides for about 2 minutes, until light golden brown as shown in the picture, it is ready
