Chicken soup wontons come with homemade wonton wrappers
Overview
A bowl of hot chicken soup wontons is bliss! Stewed wontons in chicken soup are bright in color and tender in texture. The taste is fresh but not greasy, and the taste is pure. It tastes better after adding coriander. This recipe introduces two methods, one is stewed with chicken soup and wontons, and the other is hand-cooked with red oil, both are delicious

Large shrimps, remove shrimp lines, cut into cubes, put into the meat filling, add cooking wine, oyster sauce, ginger powder, chopped onion, white pepper, chicken essence, egg liquid, crushed salted egg yolk, salt, ice water and start stirring the meat filling

When kneading the dough, the dough must be softer than the dumpling dough. After the smooth and delicate dough is mixed, move it to the chopping board, take a large dough, start kneading it evenly, press it flat, and roll it out with a rolling pin

After rolling it out, as shown in the picture, try to make it as thin as possible, about 1 mm thick

Trim off the corners with a knife and make it into a square or rectangle

Then draw out small squares of about 8 cm evenly, as shown in the picture! The skin is ready

Place the meat stuffing in the center of the wrapper and start wrapping. You can wrap it in any shape you want. It can be wrapped in a hand shape or in a lucky bag shape. There are many styles. Hong Kong-style wontons are also wrapped in this way

Because my husband likes to eat big stuffings, and he thinks the lucky bag is auspicious, so I usually wrap it in the shape of a big stuffed lucky bag, as shown in the picture. Pour water into the pot. I am feeding four people, so I made a pot of water and put in two pieces of chicken soup. You can also buy a chicken and make chicken soup by yourself. Even better. If you don’t have time to make soup, you can also put the soup pot like me. Light the fire and bring it to a boil

After the pot is boiled, add the lucky bag wontons to stew, start to cook the wontons, and cover the pot

Wash the green onions and coriander and chop them into pieces and set aside

Put in each bowl, dried shrimp skin, coriander, green onions, a little chicken essence, a little sesame oil, and an appropriate amount of white pepper

Pour in the prepared spicy red oil, take it out after the wontons are cooked, and serve with the chicken soup used to cook the wontons. If you don’t like the red oil, just leave it out and just stew the wontons in chicken soup

Picture of the finished product. Someone doesn’t like to eat coriander, so I didn’t add it. If I don’t add the red oil, it will be an authentic chicken soup wonton stew.
