Happy Pumpkin
Overview
For fish cubes and pumpkin, I wrote "happy pumpkin", which is a homophonic word, and what I want is the meaning of fish cubes and happiness. Eating a piece of pumpkin will relieve your worries and make you feel happy. The more I read, the more I think the name sounds nice and the taste is also very good. The crispy fish fillets are paired with pumpkin braised in black bean sauce. The sauce is sweet and glutinous. It's perfect with a glass of plum wine.

The fish pieces I bought in the supermarket were said to be deep-sea fish. They had been shaved off the bones and scales and cleaned up, which just saved me the trouble! Other ingredients: pumpkin, garlic cloves, ginger cubes, and tempeh are all ready.

Peel the pumpkin and cut into small pieces, wash and chop the black beans, slice the ginger, and smash the garlic.

After thawing the fish pieces, drain the water, add appropriate amount of salt, white peppercorns, egg white, and cornstarch and marinate for 10 minutes.

Heat the oil in a hot pan and slowly fry the fish pieces until both sides are golden brown. Be patient when frying fish, and fry one side before frying the other side, otherwise the fish pieces will easily fall apart and rot, affecting the appearance.

Set aside the fried fish pieces.

In another pan, add garlic cloves and sauté until fragrant.

Add black bean paste and saute until fragrant.

Add the pumpkin and stir-fry for a while.

Add a little hot water and continue to stir-fry.

Cover the pot and simmer over low heat for 3-4 minutes.

Simmer until the pumpkin is soft, then add appropriate amount of sugar and salt to taste.

Add the fish pieces, add a few drops of Maggi fresh soy sauce and stir-fry evenly. Be careful not to break the fish pieces when stir-frying.
