Black Fungus Ball Soup
Overview
This meatball soup is my mother's recipe. I learned it from her. It seems to be a secret recipe passed down from generation to generation, haha... But I'm afraid I will forget it in the future, so I made a note. Eating black fungus regularly is good for your health.

A small bag of eight fungus and 12 dried shiitake mushrooms.

Soak the fungus and shiitake mushrooms together in water.

After removing the roots and washing the spinach, soak it in water for about half an hour.

Cut the dry vermicelli to a suitable length and soak in hot water.

Chop fresh ginger and garlic into mince and set aside.

Cut the fungus and shiitake mushrooms with a knife.

Put the beef stuffing into a container, add minced garlic and ginger, no green onions, add an appropriate amount of dry starch, add an egg white, add light soy sauce, a little salt, a little sugar, a little sesame oil, and an appropriate amount of freshly ground black pepper (this can be adjusted according to your own taste)

Use a spoon to quickly mix all the ingredients in one direction to make the beef filling thicker.

Prepare all the ingredients and place them next to the pot for easy access.

Put an appropriate amount of water or stock into the pot and throw two star anise in it.

When the water is almost boiling, add the fungus and shiitake mushrooms and cook until fragrant.

Add the soaked vermicelli, add the beef meatballs made with the help of a spoon, cover the pot, and cook the meatballs.
