  1. Wash the duck, run it in hot water and set aside.

  2. Prepare the brine: Boil the cold water, add the brine bag, ginger, garlic, fennel, grass fruit, bay leaves, star anise, Sichuan peppercorns, dried chilies, and cook over high heat for 20 minutes.

  3. After boiling the brine soup, add garlic sprouts, pork rinds, rock sugar, light soy sauce, dark soy sauce, a little peanut oil, white rice wine, oyster sauce, and three tablespoons of salt.
