Golden cauliflower and black fungus wontons
Overview
I remember that when I was a child, the place I lived in was a suburban area, and my family had a vegetable plot. Although Dad was the brigade secretary, after get off work, he and Mom would go to the fields to grow some vegetables to supplement the family income. I was born in the 1970s. At that time, having a wonton meal was equivalent to a big meal now. When I came back from school, I could smell the aroma outside the door. That mouth-watering golden cauliflower wonton was a staple food that often appeared on my family's dining table. But at that time, it was really only golden cauliflower with some salt, MSG and vegetable oil, and I was not even willing to put sesame oil. But my aunt lives in the mountains of Jiangxi and often mails some mountain products to us, so sometimes Ma Ma will put some black fungus. If it is Sunday or there are guests at home, she will add some meat to it. ☺I once told my colleagues that I was making wontons with golden cauliflower. They were all surprised and said, ah, can golden cauliflower be used to make wontons? I haven’t tried it before. Don’t they usually put green vegetables? ✌In fact, in addition to broccoli, malan, coriander, leek, and celery, all can be used to make wontons, but green vegetable stuffing is more commonly used.

Of all the ingredients, there is one piece of black sesame missing, so I missed the photo

This is the inner skin of wontons. After the filling is made, it is used to wrap the wontons
-
First put the onion and ginger cooking wine and the minced onion and ginger into the minced meat and mix well and set aside (at least 10 minutes to remove the fishy smell)
-
Soak the black fungus in a clean basin with boiling water (about 30 minutes) and set aside
-
When you buy broccoli, first pick out the weeds, then wash them, put them in a basket to drain the water, and set them aside
-
Put water in the pot and boil
-
Put the washed broccoli into boiling water, blanch it and take it out immediately with chopsticks. The time should not be too long, otherwise it will be too rotten and it will not taste good
-
Take out the golden cauliflower from the boiling water and rinse it under tap water. This way it won’t be hot when you cut it and the vegetable won’t turn yellow
-
Chop the broccoli on the board
-
Chop into pieces, squeeze out the water with your hands or clean gauze, and set aside
-
Wash the soaked black fungus, cut into shreds, dice and chop, set aside
-
Go to the market to buy large pieces of mustard, wash them, slice, shred, dice, chop and set aside
-
Put all the main ingredients prepared previously into a clean pot, stir evenly, then add all the auxiliary ingredients, stir evenly
-
This is the prepared cauliflower filling. After it is prepared, wait 20 minutes before starting to wrap the wontons. Usually I pack 2 of them first to taste them and then make adjustments
