Three-three-nine dumplings
Overview
Its name translates into Chinese as salmon, three delicacies and three dumplings. It’s not as comfortable as lying down, but it’s not as delicious as dumplings. It’s a hot summer day, so it’s good to have some dumplings~

First, we put the flour into a kneading bag, pour in water and stir slowly, being careful not to pour all the water in, and then knead slowly. After the dough is formed, set it aside to rest for 20 minutes

Peel the skin and tendons of fresh salmon and chop it into meat fillings. Decide the thickness of the meat filling according to your own taste. Cut it into pieces and put it into a bowl for later use. Boil a bowl of water over high heat for later use

Cut mushrooms or other types of mushrooms into small dices, and blanch the spinach in the boiling water you cooked earlier

Pour olive oil and butter into the pot, fry the diced mushrooms, add black pepper and a small amount of salt

Chop the fennel into thin slices, squeeze out the water from the freshly blanched spinach, chop it slightly, and then pour all the ingredients into the salmon filling

Cut the ginger into small pieces, add salt and black pepper, pour a raw egg, and beat the filling in one direction

Sprinkle thin flour on the chopping board, and then start rolling out the dough. Take out the risen dough, knead the dough vigorously, cut a quarter of the dough, roll it into a long strip, cut it into quarters with a knife (note that the quarters are twice as big as usual), and start rolling out the dough

After rolling out the dough, we put a cheese slice on the dough, add the fillings, and wrap it up, making sure to wrap it tightly

After wrapping all the dumplings, we started cooking. There is a big difference in the taste of the three cooking methods

First, bake. We brush the bottom of the baking pan with olive oil and spread rosemary. This will prevent the dumplings from standing on the bottom of the pan while baking, and will also have the aroma of rosemary

Spread olive oil evenly on the dumplings, put the dumplings on the baking sheet, top with mozzarella cheese, add some black pepper, bake at 180 degrees for 20 minutes

The second method is to fry the dumplings. Pour olive oil into the pot. When the oil is hot, add butter. Place the dumplings on top and fry slowly over low heat for 3 minutes

Add boiling water to the pot, half cover the dumplings, turn up the heat and cook with the lid on for 5 minutes. Remember to sprinkle some black pepper and minced rosemary before removing from the pot. Use a spatula to gently scoop up from the bottom. The golden color will look like small gold bars, which is very appetizing

The third cooking method is traditional boiling. I won’t introduce it much. Remember that the dumplings are relatively large and should be opened in quarters
