Beef tenderloin sliced against the grain.

Soak the beef in water for five minutes to draw out the blood inside.

Prepare minced onion, ginger, garlic, dried chili segments, peppercorns, one portion of stir-fry ingredients, and one portion of oil for pouring later.

Drain the water from the beef, add a spoonful of cooking wine, a little salt, oyster sauce, and pepper, stir evenly, and marinate for ten minutes.

Add one egg white and mix well.

Add beef tenderloin and remove until cooked through.

Just pour hot oil on it.
