The selection of pork belly used to make braised pork is very important. Pork belly that is too thin will not taste good, and pork belly that is too fat will taste a little greasy. We want to choose pork belly that is 30% fat and 70% thin.

Get your spices ready. If you don’t have cloves, nuts, and nutmeg at home, you don’t need to put them in.

Prepare 2 spoons of June fresh dark soy sauce and 3 spoons of light soy sauce. Light soy sauce is used for seasoning, dark soy sauce is used for coloring

Cut pork belly into cubes. Any size.

Add a few peppercorns to the cold pan and saute until fragrant.

Then discard the peppercorns and fry rock sugar in the base oil.

When frying the rock sugar, use low heat and fry until the rock sugar melts and turns brown.

Then add the diced pork belly and stir-fry over low heat for 3 minutes. Let the fat in the pork belly stir-fry out some.

Then add light soy sauce and season with spices.

Add appropriate amount of boiling water and transfer the meat to the casserole. When stewing meat, be sure to add boiling water.

Cover the casserole with a lid and simmer for 10 minutes, then add 2 tablespoons of dark soy sauce for color.

After simmering for 20 minutes, add 2 and a half tablespoons of salt. Cover and continue simmering over low heat.

When simmering for 30 minutes, add 3 tablespoons of mature vinegar. Aged vinegar can also achieve the effect of refreshing and relieving greasiness.

Stew the braised pork for a total of 45 minutes. The meat tastes best after 45 minutes. Add a little starch water before serving.
