Overview

Saozi noodles are traditional noodles of the Han people in northwest China. Saozi means diced meat. The soup is sour and spicy, tough and refreshing. The most important thing about the noodles is the braised noodles. The braised noodles are the soul of the noodles. I had it in a friend's shop before and couldn't forget it. This time I looked up some preparation methods online and decided to try it myself.

Pour the marinated meat into the pot and stir-fry for 10 seconds over medium heat, then add the shallots and ginger and stir-fry for 10 seconds, then add the chili powder and stir-fry for 30 seconds until red oil appears. Then add the five-spice powder and stir-fry for 10 seconds until fragrant. That's the fragrance that fills the house. At this time, turn on high heat, pour in soy sauce and cooking wine and sauté until fragrant, then pour in vinegar and burn out the vinegar smell

  10. After the vinegar smell comes out, add 1000 grams of boiling water and bring to a boil. Add carrots, black fungus, daylily, potatoes, red peppers, tofu skin, salt, cover the pot and cook over high heat. After about 10 minutes, taste whether the potatoes are rotten

  11. If the potatoes are rotten, you can add diced egg skin and golden onions, cook for 5 minutes, and the sauerkraut will be ready.
