Bought fresh duck wings and duck chin.

Add water to the pot, add ginger, cooking wine, and peppercorns. After boiling, add the duck wings and blanch the duck chin.

Add some water to the pot and pour in the old brine (leftover from previously brine meat, kept frozen in the refrigerator).

Although there is old brine, some new ingredients must be added (dried chili peppers, cloves, angelica root, Sichuan peppercorns. Bay leaves. Cardamom, galangal, cumin, star anise, etc.).

Put the ingredients into the pot together with the brine, add salt, chicken powder, dark soy sauce, light soy sauce, oyster sauce, a little bit of sugar, five-spice powder, add some green onions and bring to a boil over low heat.

At this time, blanching the duck wings and duck chin is the hardest step (plucking the feathers😅).

Chop the two-section duck wings into two halves, and chop the two sides of the duck's chin (remove the throat in the duck's chin at the same time). This way, it is easier to chop the duck into two pieces, and it doesn't need to be cut again when it comes out of the pot.

Then pour into the boiling brine. Add a few cleaned eggs and marinate them for 5 minutes. Turn off the heat and gently tap the cracks in the egg shells to absorb the flavor more quickly. After 10 minutes, turn to medium-low heat and cook for 5 minutes.
