Choose fresh beef tendon and cut into 5 cm long and 1 cm wide strips or blocks.

Soak in water for 2 hours, changing the water every half hour to remove impurities and odor (blanching will cause the meat to become hard). Remove and drain the water.

Put the beef and all seasonings into the electric pressure cooker, simmer for 30 minutes, remove the exhaust, and reduce the juice in the wok over high heat. Dry in shade or oven dry. It's also delicious eaten directly.
