Soak the sea cucumbers first: the container must be oil-free and clean, use Laoshan mineral water, and your hands must be washed. Do not apply hand cream. There is no need to wash the dried sea cucumbers. Put them directly into the water, cover them and put them in the refrigerator.

It needs to be soaked for 2 days, and the water should be changed 3 to 4 times in the middle; the picture shows the size after soaking for 2 days;

Cut the sea cucumber, remove its spit, intestines, etc., and wash away the sediment;

Put the washed sea cucumbers into a pot and boil in water for 20 to 30 minutes until soft;

After cooking, continue to soak in mineral water for 3 days, changing the water 3 to 4 times in the middle, and put it in the refrigerator; the picture on the far right is the sea cucumber after soaking;

Prepare materials to make sea cucumber; scallops need to be processed in advance, and fresh scallops are also good;

Boil scallion oil: Pour oil into the pot, add scallion segments into the cold oil, simmer over low heat to release the aroma of scallions, until the white scallions turn yellow on both sides, leave a little base oil in the pot, and put the rest out for later use;

While the scallion oil is boiling, put the sea cucumber into the scallion and ginger water and simmer for a while;

In a pot for boiling scallion oil, add special soy sauce, braised soy sauce, oil, sugar and appropriate amount of water;

Add sea cucumbers and scallops and simmer over low heat, not too long

Pour in the water starch, reduce the heat until the soup is thick, then put it on a plate and pour the soup and a little green onion oil
