Fish-flavored bear paw tofu
Overview
This is the bear paw tofu that my dad taught me to make. Sichuan people call fried tofu Ermianhuang, bear paw... Simply make a fish-flavored sauce, and it’s a great accompaniment to rice.

Prepare the minced ginger and garlic, cut the tofu into thick slices, and blend the mature vinegar with white sugar and soy sauce to make a sweet and sour sauce.

Put a little oil in the pot, add tofu over low heat and fry.

Once one side is set, turn them over.

Cook until golden on both sides.

Dish out and set aside.

Put oil in the pot and add bean paste.

Stir-fry over low heat until fragrant, and stir-fry out red oil.

Add minced ginger and garlic and continue to sauté until fragrant.

Keep the heat low.

Add a little water.

Add fried tofu.

Simmer for ten minutes.

Add water starch (a little starch and water and mix well) and chicken essence to the sweet and sour sauce you just mixed, then pour it into the pot.

Let the sweet and sour sauce completely coat and blend into the ingredients over medium heat, then turn off the heat.

Take out the pot and sprinkle some chopped green onion.
