Binghua Fried Dumplings
Overview
One of my Dabao’s favorite breakfasts, the fragrant and crispy pan-fried ice flower dumplings are actually very simple to make. Because my Dabao doesn't like greasy food and likes to eat light flavors, I added a small amount of meat and vegetables. When making it, you can adjust the filling according to your usual dumpling habit. You don't have to follow my recipe. After all, everyone's living habits and tastes are different.

Add 70-75 grams of warm water to 180 grams of flour and use chopsticks to stir it into cotton wool (flour absorbs different amounts of water, so do not add it all at once. You can leave a small amount of warm water and add it according to the softness and hardness of the noodles)

Knead into a smooth dough, cover with plastic wrap and rest for 30 minutes

Cabbage cut

Boil water in a wok, blanch the cut cabbage in the boiling water, about 2-3 minutes!

Take it out and rinse it in cold water

Remove the water from the cooked cabbage.

Place the dried cabbage on a chopping board and cut into strips.

Chop the chopped vegetables.

Use both hands to squeeze out the water from the chopped vegetables and set aside

Chop onions, ginger and coriander and add to the meat filling.

Add vegetables to the meat filling and add 2-3 tablespoons of vegetable oil.

Add appropriate amount of salt.

Add a small amount of very fresh soy sauce.

Add a small amount of five-spice powder or thirteen spices, add an appropriate amount of sesame oil and chicken essence and mix well.

After waking up, roll the dough into a round shape again and cut it into two pieces from the center.

Take one part and shape it into a long strip.

Cut the long strips into small pieces of about 7 grams.

Flatten each dose.

Roll out the dough into a thick center and thin edges.

Take an appropriate amount of stuffing and wrap it in the center (the shape can be based on your own customary technique)

Wrap everything up (I am making it for breakfast, so I put it in a dumpling box and put it in the refrigerator for storage. I can take it out in the morning and fry it directly without thawing)

Prepare 200 grams of water and mix in 20 grams of starch and mix thoroughly (this step is an important step in making ice flower fried dumplings. I have tried many times. As long as the amount of starch and water is 1/10, it is no problem to make beautiful ice flowers. Of course, if you like thin ice flowers, the amount of starch can be reduced to 18 grams. If the amount is less than 18, you will not be able to make complete ice flowers!)

Heat some oil in a non-stick pan.

Arrange the dumplings (note that there must be space between the dumplings)

Fry over medium-low heat until the bottom is colored.

Mix the starch water thoroughly again and pour it evenly along the edge of the pot.

Fry over medium-low heat until the bottom is golden brown, and the dumplings can be lifted off the bottom of the pot in one piece with chopsticks. It's ready to be taken out!
