Prepare half a duck

Prepare spices, cloves and licorice are optional;

Put water in the pot, add 10ml Shaoxing wine, a section of green onion, and 2 slices of ginger. After boiling, put in the duck and blanch it. If there is no Shaoxing wine, use cooking wine;

Take out the duck, rinse it with cold water and control the moisture;

Put the duck skin side down into the pressure cooker, add all the spices and rock sugar;

Add 10ml of soy sauce, dark soy sauce and cooking wine, and finally add 250ml of water;

Put the lid on the pot, turn off the heat after 13 minutes, wait until the pressure display valve returns to its position, then remove the pressure limiting valve and open the lid;

Remove the duck and let it cool on a plate;
