Clean the pork belly and cut into square pieces.

Put the pork belly pieces into a pot, add water, add a tablespoon of cooking wine, and boil for two to three minutes. This step is mainly to remove the fishy smell.

After turning off the heat, pour away the water used to cook the meat, pour cold water into the pot, and pass the cold water through the pork pieces. This step is mainly to make the meat firmer and taste better.

Pour an appropriate amount of vegetable oil into the pot, add a handful of rock sugar, and heat over medium heat.

Add appropriate amount of light soy sauce, oyster sauce and salt.

Add onion, ginger, garlic, pepper, star anise, cinnamon, germanium, cloves, tangerine peel, angelica, cumin, dried hawthorn and rock sugar.

If you like braised eggs, peel off the shells of a few hard-boiled eggs and put them into the broth. This step can also be omitted.
