Overview
I often reminisce about the boiled fish in my hometown~~I also often miss the boiled fish made by my parents~Every time I go home~~[Boiled Fish] is one of the must-have dishes for my parents~~ Especially the [Boiled Fish] made by my dad is super delicious~~ I will eat it every time~~If I am not careful, my stomach will be full~~o(∩_∩)oHaha~~ When I wasn’t around my parents, I would think about [boiled fish] by myself~~ As time went by, it became decent~ Today’s dish [braised sole], although it is not an authentic boiled fish~~ But when everyone looks at the ingredients, they know that it tastes like boiled fish~~~~o(∩_∩)oHaha~~ Although it is braised, the Sichuan people’s taste for spicy food cannot be changed~~ I always like to use Pixian bean paste, dried chili peppers, Sichuan peppercorns, star anise, wattle strips, spicy millet, pickled ginger, garlic, green onions~~~ Although it is braised in braised sauce, the taste is still spicy and delicious, super appetizing~~

Prepare the ingredients: After cleaning the plaice, wipe off the water and make a few cuts on the fish body;

Wash and chop onions, ginger and garlic; wash and dice celery, millet, and wattle branches; prepare dried chili peppers, peppercorns, and star anise;

Heat an appropriate amount of vegetable oil in a pan; add the sole and fry until brown on one side; flip and fry on the other side;

Heat up another frying pan;

Add Pixian bean paste and stir-fry until fragrant, then add onions, ginger, garlic, dried chilies, Sichuan peppercorns, and star anise and stir-fry until fragrant;

Add the sole and stir-fry carefully;

Add appropriate amount of braised soy sauce, balsamic vinegar, cooking wine, sugar, salt, white pepper, and boil water;

Add celery, two vitex branches and millet and cook briefly;

After the sole is cooked and fragrant, turn off the heat and cook.
