  2. Stir-fry Sichuan peppercorns, aniseed, cinnamon and bay leaves in cold oil in a cold pan.

  6. Add dry ingredients (1 tsp salt, 1 tsp thirteen spices, 1 tsp chicken powder) and stir-fry for ten seconds. Humidify the ingredients (2 tablespoons of light soy sauce, half a tablespoon of oyster sauce, 1 tablespoon of steamed fish soy sauce, 2 tablespoons of chili oil, 2 tablespoons of chopped green onion) and stir-fry until coloured.
