Milky Purple Sweet Potato Bread
Overview
Last time I shared a savory bread with bacon and scallion rolls that I often make. Today I launch the sweet purple sweet bread that I recently developed. It tastes great and looks beautiful. The filling is finely made from coarse grains, which is healthier and more nutritious than the heavy oil and heavy sugar bean paste; the appearance has subverted the twisted shape or round shape of the past red bean paste bread. This milky purple sweet potato bread has the appearance of shortbread and the taste of bread. It is the most satisfying work I have made since making bread.

Except for the butter, put the ingredients into the bread machine and knead the dough for 20 minutes

Add butter and start dough mixing process for 20 minutes

While the dough is kneading, make the filling. Steam and peel about 500 grams of purple sweet potato, add melted butter and sugar, add an appropriate amount of fresh milk and mash into a paste

Take out the kneaded dough and knead it, divide it into 9 small doughs, let it rest for 15 minutes and then start filling it with fillings

Flatten the dough filled with purple sweet potato filling

Use a knife to make 6 cuts along the edge as shown in the picture

Put it in the oven to ferment for 1 hour. If the oven does not have a fermentation function, you can preheat the oven to 100° for 5 minutes and then turn it off. Place the bread pan on top of the oven and cover the bread pan with plastic wrap

Brush the fermented dough with egg yolk liquid and sprinkle black sesame seeds in the middle for decoration

Bake in the oven at 180° for about 15 minutes. After baking for 8 minutes, turn off the heat. After baking, apply olive oil on the bread
