Golden Tofu
Overview
The Dragon Boat Festival is here, and every unit will distribute some salted duck eggs, loquats, rice dumplings, etc. It is a custom in Suzhou to eat salted duck eggs during the Dragon Boat Festival. I always feel that salted duck eggs are too salty, so I put some thought into making this golden tofu. Boil the egg yolk into a thick soup, add soft tofu and stew together. The tofu absorbs the salty and fresh flavor of the egg yolk, and the egg yolk soup has a slightly gritty texture, giving it a unique flavor.

Prepare materials

Peel the salted duck eggs and remove the egg whites, taking only the yolk part

Heat oil in a pan, add onion, ginger and garlic and saute until fragrant

Add egg yolks and stir-fry together, stir-fry the egg yolks into puree, add cooking wine and stir-fry for a while

Add water, bring to a boil, cook until the soup is slightly thick, add salt, cooking wine, Maggi fresh soy sauce, white pepper and stir well

Add the cubed tofu and simmer over medium heat for about 5 minutes
