Overview

I modified this Song's Fish Soup with more tofu and rapeseed in it. I remember when I was in Guangzhou, there was a kind of milk cabbage in Guangzhou, and it was delicious when made with that. The ham and the like should be cut into shreds, so I cut them into cubes to match the shape of the tofu. It doesn’t affect the taste, but the visuals are a little different. Song’s Fish Soup is a famous dish in the Southern Song Dynasty, with a history of more than 800 years. According to the records of "Old Martial Arts" written by Zhou Mi (Song Dynasty): On March 15, the sixth year of Chunxi (AD 1171), Song Gaozong Zhao Gou boarded a royal boat for a leisurely tour of the West Lake. He ordered his servants to buy turtles and fish in the lake and release them. In the call, there was a woman named Song Wusao who sold fish soup. She claimed to be from Tokyo (now Kaifeng). She came here with her and made a living selling fish soup by the West Lake. Emperor Gaozong ate the fish soup she made and admired it very much. In memory of her old age, he gave her gold, silver and silk. Since then, its reputation has skyrocketed, and wealthy families have rushed to buy the food. Song's wife's fish soup has become a famous dish in the capital. Experienced continuous development and improvement by generations of chefs. The ingredients of Song Sao's fish soup are more refined, and the resulting fish soup is shiny, tender and smooth, and tastes like crab meat, so it is called crab soup. It is a well-known traditional Hangzhou flavor dish. Ingredients: A piece of fresh fish, an appropriate amount of rapeseed, mushrooms, and soft tofu (must use soft tofu, soft tofu is delicious.
